Ziba’s Pitas - Authentic Bosnian Food

Ziba’s Pitas is one of the best food carts in Portland. Ziba Gucevic, who hails from Bosnia, gets up very early to start preparing her authentic, made from scratch meatballs and “Pitas.” I put Pita in quotes because these are not what you’d normally associate with the word Pita. They are more like a light quiche or a filo dough empanada. These little pies are light, flaky, and baked with your choice of Meat (beef, onions, potatoes, spices), Cheese (eggs, feta, sour cream, cottage cheese), Zucchini or Spinach (eggs, spinach, cottage cheese, sour cream). The full plate, which I highly recommend, comes with delicious ajvar and a refreshing sour cream cucumber salad. Ziba’s also has two Cufte (meatball) plates: one in a cream sauce with ustipaks (”like bread but better” the menu says) and one in a red sauce served over rice. You’ve got to check this place out. It’s very affordable and one of the most delicious lunch spots you’ll find downtown.

Ziba’s is a great place to eat, and I don’t understand why that stand isn’t more crowded (although, thats good for me). Maybe people are scared by the name? Its too bad, really delicious food, and Ziba herself is very friendly.
i’m also surprised at how short the line usually is at Ziba’s. It’s been there for a while now tho, so i guess they must be getting by. but yeah, people are really missing out when they pass this place up.
